Ripe Fruit vs Green Fruit

Ripening process - Left on the tree or vine to ripen gives more contact time for the fruit or veggie with their soil's nutrients, water coming up the roots, and sunshine photosynthesis. The fruit or vegetable, believe it not, gets threatened by air's oxygen (just like our bodies) and starts to oxygenate. This stimulates the plant to produce it's own anti-oxygenates or antioxidants.

Ripe = MORE - antioxidants, vitamins, minerals, sugar     LESS - resistance starch

Green = MORE - Resistance starch     LESS - antioxidants, vitamins, minerals, sugar

Green Plantains are higher in vitamins and minerals than ripe bananas. That's how SUPERFOOD they are!
