Ice Cream Cake

Plantain & Cassava Flour Cake

Yummy! This chocolate cake can be made in food processor.

c = cup, t = teaspoon, T = tablespoon

 

Ingredients:

 

Instructions:

  1. Preheat oven to 350◦F. Grease two square pans.

  2. Mix dry ingredients; set aside.

  3. In a separate bowl mix apple cider vinegar (if using), vanilla, oil, sugar, egg and milk.

  4. Beat in flour mixture until combined.

  5. Pour into 2 pans

  6. Bake for 20 - 25 minutes.

  7. Cool for 1 hour.

  8. Cut both cakes in half so you have 4 layers.

  9. Spread softened Ice cream on 3 layers

  10. Now stack with un-ice-creamed cake on top

  11. Frost all around

  12. Enjoy!
