Ice Cream Cake
Plantain & Cassava Flour Cake

3/4 c POW! Plantain Flour
1 1/4 c POW! Cassava Root Flour
- 1 1/2 t baking soda
- 1 teaspoon salt
- 3 t Cream of Tarter OR 3 t apple cider vinegar
- 1 T vanilla
- 1/2 c oil
- 1 c sugar
- 4 eggs
- 1 c milk
- Ice Cream (softened)
Preheat oven to 350◦F. Grease two square pans.
Mix dry ingredients; set aside.
In a separate bowl mix apple cider vinegar (if using), vanilla, oil, sugar, egg and milk.
Beat in flour mixture until combined.
Pour into 2 pans
Bake for 20 - 25 minutes.
Cool for 1 hour.
Cut both cakes in half so you have 4 layers.
Spread softened Ice cream on 3 layers
Now stack with un-ice-creamed cake on top
Frost all around
