Oat Malanga Flour Breakfast Muffins!

What to do with your leftover soaked oats and those browning bananas? Make these versatile Malanga Muffins. Makes 28 muffins

Ingredients:

  • 2-4 ripe bananas

  • 2 eggs

  • 1 stick butter

  • ¼ cup water

  • ¾ cups sugar

  • ¾ cup soaked oats (or left over oats)

  • 1 tsp. Vanilla extract

  • 1 cup POW! Malanga Flour

  • 1 TBL Baking Powder

  • Pinch of Cinnamon

  • 1 tsp. salt

 

Instructions:

  1. Preheat oven to 350◦F. Use your Reusable Cupcake Cups or Grease two 8-inch or 9-inch baking pans

  2. Mix dry ingredients; set aside.

  3. In a separate bowl mix bananas, butter, vanilla, and sugar. Add eggs and beat high until smooth. Gradually add dry ingredients by alternating. Beat batter on high speed until well mixed. Spoon batter into Reusable Cupcake Cups.

  4. Bake for 30 minutes.

  5. Cool for 10 minutes.

  6. Enjoy
