Zucchini Bread

Moist and wonderful plantain flour based vegetable bread. They'll never know how healthy it is! Try replacing some of the zucchini with grated carrots.

Ingredients:

1 ½ c POW! Plantain Flour

1 teaspoon baking powder

1 teaspoon cinnamon

1 c sugar

1 teaspoon salt

1 c coconut oil

3 eggs

2 c zucchini (or sub some grated carrots)

1 teaspoon lemon juice

¼ c water

½ c walnuts optional

½ cups chocolate chips (optional)

 

Instructions:

Preheat your oven to 350 degrees Fahrenheit

Mix all ingredients at once

Pour into well greased pan

 

Temp: 350

Time: Bake 40 minutes

Size: Makes 8 x 8 pan
